Ingredients

  • 1 medium onion diced
  • 1 red bell pepper diced
  • 4 cloves garlic minced
  • 8 ounces sliced mushrooms
  • 4 boneless skinless chicken breasts
  • 28 ounces crushed tomatoes
  • ½ cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Garnish

  • fresh parsley chopped, optional

Instructions

  • Lightly spray the insert of your slow cooker with nonstick cooking spray.
  • Add the diced onion, red bell pepper, minced garlic, and sliced mushrooms. Stir to combine. (To add more flavor, saute these ingredients in 1 tablespoon of olive oil until the onions are translucent, 5 to 7 minutes.)

  • Place the chicken breasts on top of the vegetables.

  • In a separate bowl, whisk together the crushed tomatoes, chicken broth, tomato paste, Italian seasoning, salt, and black pepper until well combined.

  • Pour the tomato mixture over the chicken and vegetables in the slow cooker.

  • Serve hot, garnished with chopped fresh parsley, if desired.
