Ingredients

  • 2 tablespoons fresh lime juice
  • 1 cup fresh or frozen pineapple chunks
  • 1 cup frozen mango pieces
  • ¼ cup coconut water
  • 1 cup ice cubes
  • 4 ounces rum optional

Rim

  • Lime wedge
  • Sugar or salt

Instructions

  • Place all the ingredients in a blender and pulse until smooth. Too thick? Add a little more coconut water or lime juice. Too thin? Add more frozen fruit or ice cubes.
  • Rim the glasses by cutting a wedge from a lime and rub it all along the rim of the glass.
  • Add sugar to a shallow bowl and place the glass upside down in the bowl so the sugar sticks to the lime juice on the rim.
  • Pour the mocktail into a glass and garnish with a lime slice, pineapple wedge or umbrella – enjoy!
  • Wanting to turn this mocktail into a cocktail? Add the rum to the blender at the same time as the other ingredients.

Notes

Coconut water can be substituted with juice or water.
To turn this into a cocktail, add 4 ounces of tequila for margaritas or 4 ounces of rum for daiquiris.
