Gingerbread Cake Recipe

Ingredients

  • 3 large eggs room temperature
  • 1 ½ cups light brown sugar packed (or dark brown sugar)
  • 1 cup buttermilk
  • ½ cup unsulphured molasses see notes
  • ½ cup vegetable oil
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt

Cream Cheese Frosting

  • ½ cup unsalted butter softened
  • 8 ounces cream cheese softened
  • 4 cups powdered sugar
  • ½ teaspoon fine sea salt
  • 2 tablespoons heavy cream

Instructions

  • Preheat your oven to 350°F. Line a 9x13-inch baking pan with parchment paper and set aside.
  • In a large mixing bowl, beat together the eggs and brown sugar. Add in the buttermilk, molasses and vegetable oil until well combined.

  • Slowly add the flour, baking powder, ginger, cinnamon and salt, mixing until just combined.

  • Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  • Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center of the cake comes out clean or with a few moist crumbs.
  • Allow the cake to cool completely in the pan on a wire rack before frosting.

Cream Cheese Frosting

  • Beat together the butter, cream cheese, powdered sugar, salt and heavy cream  until the frosting is light and fluffy.
    ½ cup unsalted butter, 8 ounces cream cheese, 4 cups powdered sugar, ½ teaspoon fine sea salt, 2 tablespoons heavy cream
  • Spread the frosting evenly over the cooled cake. If desired, add some gingerbread men and sprinkle the top with a little extra ginger or cinnamon for garnish.

Notes

Molasses: Using unsulphured molasses will give a milder flavor compared to blackstrap molasses, which can be quite strong and bitter. Choose according to your taste preference.

Storage Information
Room Temperature: If you plan to serve the cake within a few hours, you can leave it out at room temperature. Cover it with plastic wrap to keep it from drying out.
Refrigerator: For longer storage, keep the cake in the refrigerator due to the cream cheese frosting. Cover it tightly with plastic wrap or store it in an airtight container. Allow it to come to room temperature before serving to enjoy the best texture and flavor.
Freezer: To freeze, cut the cake into individual slices and wrap each piece in plastic wrap, then place them in a freezer-safe container or ziplock bag. When you're ready to enjoy, thaw the slices in the refrigerator overnight, then let them sit out at room temperature for a bit before serving.
