Antipasto Skewers

These Antipasto Skewers are the ultimate party appetizer! Packed with bold flavors from marinated mozzarella, savory meats, tortellini and fresh veggies. A drizzle of balsamic glaze adds a sweet and tangy finish. Easy to assemble and fun to eat, they’re perfect for any gathering!

Ingredients

  • 9 ounces three cheese tortellini
  • 18 cherry tomatoes
  • 6 ounces salami
  • 6 ounces pitted kalamata olives 1 jar, drained
  • 14 ounces quartered artichoke hearts marinated or not, your choice
  • 1 cup spinach or arugula
  • 16 ounces pepperoncini peppers 1 jar, drained
  • 8 ounces marinated mozzarella pearls
  • 6 ounces prosciutto
  • 6 ounces green olives 1 jar, drained
  • basil leaves optional
  • ¼ cup balsamic glaze optional

Instructions

  • Bring a small saucepan of water to a boil. Add the tortellini and cook according to the package instructions. Once cooked, drain and set aside to cool completely.

  • While the tortellini cools, gather all the ingredients. Arrange your skewers on a tray or cutting board to make assembly easy.

Skewer Assembly (Can be assembled in any order you like.)

  • Start by sliding a cherry tomato to the bottom of the skewer, then fold the salami in quarters and add that to the skewer.
    18 cherry tomatoes, 6 ounces salami
  • Then add the kalamata olives and artichokes, folded spinach or arugula and pepperoncini peppers.
    6 ounces pitted kalamata olives, 14 ounces quartered artichoke hearts, 1 cup spinach, 16 ounces pepperoncini peppers
  • Slide on the mozzarella pearls, prosciutto and green olive in no particular order. Finish with the basil, if using.
    8 ounces marinated mozzarella pearls, 6 ounces prosciutto, 6 ounces green olives, basil leaves
  • Drizzle balsamic glaze over the assembled skewers for an extra burst of flavor.
    ¼ cup balsamic glaze

Storage Information
These antipasto skewers are best served immediately but here is the information you'll need to make them in advance and store leftovers.
  • Make Ahead: Assemble the skewers up to 24 hours in advance. Store covered in an airtight container in the refrigerator.
  • Leftovers: Keep leftover skewers stored in an airtight container in the fridge for up to 3 days.
