White Chocolate Cranberry Cheesecake
Is it just me or is it hard to believe that Thanksgiving is NEXT week?? And get ready for this…Christmas is just 39 days away! I absolutely love the holiday season and try to make every day memorable and fun, but geesh, it sure seems to go by faster and faster each year.
This is my favorite post of the ENTIRE year and I have been bouncing on my toes with excitement because today is the day I get to share it with all of YOU! This cheesecake is the showstopper recipe you’ve been searching for!
Not only is this cheesecake the ONE recipe I want you to make this holiday season, it’s the one recipe I want you to pin…again and again. Here’s why…Challenge Butter and UNICEF are partnering again this year in support of their Pin a Recipe, Feed a Child campaign.
Each year, get ready for this, nearly three million lives are lost due to the childhood malnutrition crisis. This is such a staggering, heartbreaking statistic to hear about. But, you can help!
Starting TODAY and going through December 31, 2015, Challenge will donate a meal to UNICEF to feed a child in need for every recipe pinned from it’s Pin a Recipe, Feed a Child Pinterest board.
This campaign is seriously the easiest way for you to give back this year. Challenge has committed to providing up to 75,000 meals through this campaign so it’s up to you to head on over to the board and start pinning!
Now, let’s talk cheesecake.
BEST CHEESECAKE EVER. And yes, I meant to use all caps here. This cheesecake deserves it. Cheesecake has always been my favorite – most likely because it’s super low-cal and fat-free! #wishfulthinking
But it’s the holidays people – splurge a little! Dreamy, creamy decadence – every bite is pure bliss! The white chocolate adds an incredible depth of flavor and the cranberries and orange zest will really have your guests sitting up and taking notice.
The sugared cranberries on top are truly the icing on this cake. Check out my friend Karen’s post on how to make these EASILY. If you don’t want to go through the trouble, fresh cranberries would look equally fantastic.
This cheesecake is so perfect for the holidays but I wouldn’t turn down a slice any day of the year 🙂 Please pin this recipe and all the others you find here!
How To Make White Chocolate Cranberry Cheesecake
White Chocolate Cranberry Cheesecake
Ingredients
Crust
- 26 OREO cookies
- 4 tbsp butter melted
Filing
- 32 oz cream cheese softened
- 3/4 cup sugar
- 1 tbsp corn starch
- 2 tsp vanilla extract
- 3 eggs room temperature
- 4 oz white chocolate melted
- 1 cup dried cranberries
- 1 tbsp orange zest
White Chocolate Ganache
- 4 oz white chocolate
- 3 tbsp heavy whipping cream
Instructions
- Preheat the oven to 350 F.
- Lightly butter the bottom and sides of a 9 inch spring form pan. Set aside.
Crust
- Place OREOs in a food processor and pulse until only fine crumbs remain. (You will need to put the ENTIRE cookie in - don't remove the filling! )
- Drizzle in the melted butter and pulse several times until it is completely incorporated.
- Press the mixture firmly into the bottom of the spring form pan.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add the sugar, corn starch (keeps the cake from cracking!), and vanilla extract and beat until smooth, scraping the sides of the bowl as necessary.
- Beat the eggs in, one at a time, just until incorporated.
- Fold in the melted white chocolate, cranberries and orange zest.
- Pour the filling on top of the crust and spread evenly.
- Place the pan on a baking sheet and bake for 40-55 minutes. The cheesecake should appear dry and slightly puffed around the edges and slightly moist in the center - slightly jiggly.
- Turn the oven off, open the oven door, and let the cake cool for an hour, undisturbed. Do not skip this step! Letting the cheesecake cool slowly will keep it from cracking.
- Remove the cheesecake from the oven and place on a cooling rack. Run a thin knife around the edge to loosen it from the pan.
- Let the cheesecake cool completely.
- Transfer cheesecake to the refrigerator and let chill for AT LEAST 8 hours, 24 hours is best.
White Chocolate Ganache
- Microwave white chocolate and heavy whipping cream together in a microwave safe container for 30 seconds on high heat. Stir. Repeat once more and stir until the chocolate has completely melted.
- Remove the sides of the spring form pan and pour the ganache over the top. Garnish with fresh cranberries if desired.
