For those of you that don’t know, I live in the Sacramento area here in California. After a really rainy start to the season, we’ve been experiencing Spring-like temperatures for several weeks now. I’m talking  mid-70’s you guys. My boys are wearing shorts to school and my fruit trees are in full bloom. I can almost guarantee that we’re going to have just ONE more windy storm that is going to wreak havoc on my trees. And then I’m going to cry.
The good news it that we’ve been grilling  every few days and the boys are burning off all their extra energy playing outside for hours each day after school. It’s like Spring is here…in February.
It’s hard to believe that March is next week and then we’re just a few short weeks away from Easter. The boys and I are going to be flying out to Virginia during Spring break to visit my little sister who is pregnant with her first baby. Very exciting! I’m throwing her a baby shower while I’m out there and it’s been interesting planning an event like that from across the country.
My plan is to send a big box of stuff over the week before we fly out so that I have most of what I need already there when we arrive. One of the menu items has to be fluff. It’s kind of my thing. I love it any way I can get it and I never get tired of making new versions.
Today I’m sharing this Three Minute Easter Fluff with you which also happens to be the perfect addition to my sister’s baby shower. I used colored marshmallows (a.ka. Funmallows) that add a sweet touch to this fluff. My Target was carrying the bunny shaped marshmallows so I grabbed a bag of those but the regular funmallows are just perfect too.
This fluff comes together in literally, 3 minutes. Maybe 2 1/2 if you’re speedy. It’s a one-bowl, dump and go dessert, that will have everyone sighing in delight. Perfect for your Easter celebration…or a baby shower!
I see myself making this version a lot in the future. So easy and absolutely delish!

Can’t go wrong with more pineapple – yum! Happy (late) Easter to you too Harriet!

This looks tasty! Reminds me of something my mom or one of my aunts made when I was younger. I’ll have to try it out.
Teresa Reichel says
Do you make the pudding according to the box? Or do you just use the juice from the pineapple? Thanks

Hi, people are saying that it is too sweet. Do you think so? The recipe is similar to Watergate Salad which uses pistachio pudding and no coconut. I am thinking of making it to take to an Easter Party on Saturday. It is just SO cute! Thank you!
Laura says
I use UNSWEETENED coconut flakes from Walmart or health food stood store to cut the sugar, it seems to help without sacrificing flavor.

Do have the source for the blue bowl with the chicken wire motif? It is so cute.

I got it at Target last year…

Can you refrigerate this over night and it still be good for a function the next day? Or should I make this the day of the event?
Thanks!
Trish - Mom On Timeout says
You can make ahead of time for sure!

made it today and was disappointed, much too sweet even for me, should have used the whole 20 ounce can of crushed pineapple instead of the one cup, didn’t use full bag of marshmallows either
Rosemary says
My aunt used to make a similar salad and I loved it. Unfortunately as an adult I have developed an allergy to pineapple. Do you have a suggestion for a substitution? Wondering if I mashed pears or mandarin oranges that would work.
Thank you
