We’re leaving in a couple of weeks for a Disney cruise and while I’m super excited to go I’m not looking forward to donning a swim suit immediately after the holiday season. Yikes! The good news is that I can still eat almost everything I love without out feeling guilty. I just need to make a few modifications 🙂
These orange muffins kinda freaked me out with how good they were. I took one of my favorite “traditional” muffins recipe and swapped in some Greek yogurt and coconut oil for less healthier ingredients. The result was stunning.
These muffins are more moist, more delicious, and WAY more fabulous than the original recipe. I love the brightness that the orange zest adds to these incredibly tender muffins. Bryce devoured, DEVOURED three of these while I was taking the pics.
I was like slooooww down, mommy isn’t done yet!
Hard to blame him though. That sweet glaze speckled with orange zest is just too pretty to resist.
These muffins are the perfect treat to enjoy with your favorite cup of coffee or tea and would be a gorgeous addition to any breakfast or brunch! Lightenend up just enough that you can enjoy one…or two…without the guilt!

These skinny orange muffins remind me of sunshine, which we have none of here in Indiana during our winter season. They look so delicious and fluffy. Sharing and visiting from Lou Lou Girls! 🙂

Glad to bring a little sunshine into your life Kim 🙂 Thanks for visiting!

I can totally see you telling Bryce that: “Mommy isn’t done yet!!” I always set aside the worst-looking ones just in case someone (or, umm, I) want a taste test before the photo shoot is over. 😉 Pinned!
Trish - Mom On Timeout says
Good idea Amy! I need a pile of “these ones you can eat” while I’m shooting 🙂 Thanks for the pin!
Kim says
Just be careful because even though they’re healthy, they’re 211 calories each, and that can add up fast if you can eat 3 without blinking like me. 🙂
Trish - Mom On Timeout says
LOL! Then you and Bryce have a lot in common Kim! Glad you enjoyed the recipe 🙂

I have a question about the coconut oil. Is the measurement the solid room temp oil or is it the melted oil. Wanted to clarify as I would not want to put too much or too little.
Trish - Mom On Timeout says
I measured it in liquid Mar – enjoy!

Exactly Laura 🙂 I guess that’s what cover-ups are for!

I wouldn’t want to put on a bathing suit after my December either, Trish, but I think everyone else on that cruise will be in the same boat (pun kind of intended!). These muffins sound perfect for a healthier but delicious breakfast pastry — pinned!
Trish - Mom On Timeout says
LOL! Pun definitely intended! Thanks for the pin Marcie!

Do you think these muffins would work using Coconut Cream isn’t of Greek Yoghurt for a DF version? It has a think consistancy like yoghurt but a different flavour
Trish - Mom On Timeout says
They do and they are just SO fun Lisa! I think it would be worth a try – let me know how it turns out!
