Rotisserie Chicken Salad Sandwich recipe that utilizes the delicious and convenient flavors of a rotisserie chicken! Made with apples and raisins for amazing flavor and crunch! Don’t forget the secret ingredient!
All moms need a little help in the kitchen from time to time – at least I do! I have found that purchasing a Rotisserie Chicken is cost-effective and very versatile. I can usually get at least two meals out of one chicken and the meat is moist and flavorful. One recipe that I like to make is Rotisserie Chicken Salad Sandwiches.
It takes minutes to prepare and tastes delicious. Using apples and raisins create great texture and crunch as well as added sweetness.
Ingredients:
2 c chopped, cooked chicken
1 c diced apple (I use Gala)
1/2 c raisins
1/4 c mayonnaise
1 tsp celery seed
salt and pepper to taste
bread (your choice)
Directions:
Combine all ingredients in a bowl and stir until the mayonnaise is evenly incorporated. Chill for at least thirty minutes.
Serve on your choice of bread with lettuce or sprouts. I love this recipe on Sourdough Walnut Wheat Bread  – yum! This is really the perfect weeknight meal and the flavors are so lovely – delicious and nutritious!

Rotisserie Chicken Salad Sandwich
Ingredients
- 2 cups chicken chopped and cooked
- 1 cup diced apple I use Gala
- 1/2 cup raisins
- 1/4 up light mayonnaise
- 1 tsp celery seed
- salt and pepper to taste
- bread your choice
Instructions
- Chop up the chicken using your choice of dark or white meat - I use both. Dice the apple into small, bite-sized pieces.
- Combine all ingredients in a bowl and stir until the mayonnaise is evenly incorporated. Chill for at least thirty minutes.
- Serve on your choice of bread with lettuce or sprouts.

We had a rotisserie chicken lately, two meals first night. With part of the leftovers I made a chicken pot pie, using crescent roll dough as the crust. There’s still one breast left to make chicken salad out of. They really are a good deal if you’re up to take the time to pull all the meat off the bones after the first time it’s served.

I’ve used dry cranberries instead of raisens. Mix a little bit of mustard with the mayonnaise adds of a different taste. I didn’t have apples so I used grapes and added sunflower seeds to add the crunch apples would have given the salad.
