There is something about summer that has me craving fresh, flavorful salads like no other time of year. There is such a bounty of fruits and vegetables readily available during this time and I want to enjoy each and every one.
This particular salad is one of my favorites – especially for summer. I took my favorite pineapple salsa recipe, turned down the heat, made the cucumber and pineapple pieces larger and voila – the most refreshing, flavorful salad EVER.
I absolutely adore how the bright yellow of the pineapple contrasts so beautifully with the deep, dark green of the cucumber, cilantro, and lime zest. These pictures really do not do it justice.
The sweetness of the pineapple is balanced by the acidity of the lime and the crunchiness of the cucumber. This recipe is perfectly simple and can easily be scaled for a small dinner or to feed a crowd.
Trust me. If you’re serving this salad up anytime this summer, make A LOT. This salad is an eye-catcher and your guests will be coming back for seconds, guaranteed.
This pineapple salad is the perfect addition to any sort of bbq or cookout you have planned. It’s also great for those of us who don’t have a lot of time and are craving those fresh, sweet flavors of summer. Enjoy!

Just wondering if the Cilantro is the same as coriander? Really appreciate it if you can elaborate on that. Many thanks, it sounds good.
PAUL C HUTSELL says
Coriander is cilantro seeds ground up.

**side note – Coriander leaves and cilantro are the same just in case you’re not in the US.
