Popcorn balls made with Andes peppermint crunch baking chips and marshmallows! An incredibly yummy combination that’s perfect for Christmas!
So yesterday morning I realized that I didn’t really have anything to take to Bryce’s Christmas party at preschool. Then I remembered what I did last year when I was in a similar situation – popcorn balls! This recipe comes from my Grandma and it’s been a holiday tradition for as long as I can remember. She made hers fist-sized and I wanted to make them a little more manageable for young children. I had these cute popsicle sticks from World Market and I realized they would be perfect! I also happened to have a bag of Andes Peppermint Crunch baking chips lying around and wow! I have always loved popcorn balls but this is definitely my new favorite way to enjoy them!
Ingredients:
- 12-14 cups popped, plain popcorn {keep warm}
- 1 lb marshmallows
- 1 stick butter plus more for your hands
- food coloring {optional}
- 1 1/2 cups Andes Peppermint Crunch baking chips, divided
Directions:
Melt the marshmallows and butter together, stirring frequently. Add in food coloring, a drop or two at a time until desired color is achieved. Pour marshmallow mixture over warm popcorn. Sprinkle 1 cup of Andes chips over the top.
Butter your hands generously and dig in! {The butter protects your hands from the heat and keeps the marshmallow mixture from sticking to you. Reapply as necessary.} Mix everything together and start forming balls.
Stick the posicle stick in the popcorn ball and roll in remaining Andes chips.
The flavor of these pops is out of this world amazing! Sweet marshmallows, crunchy popcorn, topped with a peppermint kick!
Bryce was pretty excited to be taking these fun pops to school! {His black eye from running into a shelf at Target is almost gone…crossing my fingers for Christmas!}
A lot of people think that popcorn balls are really sticky – but these aren’t! Once they have set up for about 20 minutes you can touch them and not get sticky at all.
