Simple side dishes are one of my most favorite things of all time and this elegant and delicious Green Beans Almondine recipe is just that. Made in a single skillet, this easy side dish graces our holiday table every year and makes frequent appearances with simple, weeknight dinners. It fits equally well in both setting.

What Is Almondine?
Almondine or amandine is a French term that simply means almond garnish and since these green beans are topped with almonds, they are Green Beans Almondine.
For this recipe, we’re toasting sliced almonds in a skillet with butter to bring out the earthy, nutty flavors and aroma.

While many recipes would suggest you blanch the green beans first, I’m all about saving time and dishes with this simplified and, dare I say, improved version of Green Bean Almondine.
With a small amount of water and a lid, simply steaming the green beans for about 7 minutes results in perfectly cooked and tender green beans that are full of flavor. You just can’t go wrong with this String Beans Almondine!

- unsalted butter – helps to toast the almonds and adds amazing flavor to the dish.
- sliced almonds – you can also use slivered almonds but I love the color from the skins with sliced almonds.
- extra virgin olive oil – adds flavor to the green beans.
- green beans – should be rinsed and trimmed and take a few minutes to pick through the beans and remove any that aren’t firm and fresh.
- lemon juice – fresh is best and it brightens the flavor and helps the green beans to obtain that lovely bright color.
- sea salt – or kosher salt for flavor.
- garlic – about 3 cloves is what I use. You want to mince it really finely. A garlic press is the right tool for this job.
How To Make Green Beans Almondine
- Melt butter in a large skillet or sauce pan that has a lid. Add the almonds and toast until golden brown and fragrant. Remove from skillet and set aside.
- Add olive oil to the same skillet. Add the green beans, water, salt and lemon juice and toss to combine.
- Place lid on the skillet and cook until beans are bright green and tender.
- Remove the lid and continue cooking until the water has evaporated.
- Stir in butter and minced garlic. Sauté for 1 to 2 minutes until the garlic is fragrant.
- Stir in the toasted almonds, test for seasoning, and serve hot.
Storage Information
Refrigerator: Leftover green beans can be stored in airtight container in the refrigerator for up to 3 days. This Green Bean Almondine recipe can be gently reheated in the microwave or in a skillet. You might want to add a little broth while re-heating.
Freezer: This recipe can be stored in the freezer in an airtight, freezer safe container for up to 3 months. Make sure to let it cool completely before transferring to a container.
Make Ahead Information
This green bean almondine recipe can be made up to 3 days in advance and refrigerated until ready to serve. Because this recipe is so easy to prepare, I do recommend making it the same day you plan to serve. When reheating, you do run the risk of cooking the beans down to the point of mushy so be careful with that. You may want to undercook slightly when making this dish if you plan on making it ahead of time.
Trish’s Tips and Tricks
- You might be wondering if you can use frozen green beans in this recipe and the answer is yes. You can cook them straight from frozen or let them thaw overnight in the fridge. If cooking from frozen, you will need to a few minutes to the cooking time. Test the green beans to make sure they are crisp-tender before moving on to the next step.
- Consider adding some finely chopped, cooked bacon to this dish when you add the toasted almonds back in. They add a ton of savory, saltiness to the dish that goes so well with fresh flavor of green beans, almond and garlic.
Serving green bean almondine can be a little tricky. My tool of choice is tongs. It’s easier to grab the green beans with tongs than scoop them with a large serving spoon or fork.

Green Beans Almondine
Ingredients
- 2 tablespoons unsalted butter divided
- ½ cup sliced almonds or slivered almonds
- 1 tablespoon extra virgin olive oil divided
- 1 pound green beans rinsed and trimmed
- â…“ cup water
- 1 tablespoon lemon juice fresh is best
- ½ teaspoon sea salt or kosher salt
- 1 to 2 teaspoons minced garlic about 3 cloves
Instructions
- Melt one tablespoon butter over medium heat in a large skillet or sauce pan that has a lid. Add the sliced almonds and stirring frequently, toast until golden brown and fragrant, about 4 to 5 minutes. Remove from skillet and set aside.2 tablespoons unsalted butter, ½ cup sliced almonds
- Wipe the skillet clean with a paper towel and add one tablespoon of olive oil to the skillet. Add the green beans, water, salt and lemon juice and toss to combine.1 tablespoon extra virgin olive oil, 1 pound green beans, ⅓ cup water, 1 tablespoon lemon juice, ½ teaspoon sea salt
