Yes! Just chop it finely and sauté briefly to remove excess moisture before adding to the crockpot.

This dip can be reheated in the microwave, stirring occasionally, or warmed in the oven at 350°F until heated through.
What else can I serve this dip with besides the crostini?
We love tortilla chips, toasted baguette slices or even veggies like celery sticks!
What size crockpot should I use?
A 2.5 quart crockpot to a 4 quart crockpot will work for this recipe. I love this one for dips!
Trish’s Tips
- Make sure to thoroughly drain the spinach and artichokes to avoid a watery dip.
- Remember to stir the dip occasionally to help prevent it from burning on the bottom or sides.
- The recipe can easily be halved and cooked in a two-quart crockpot.
- Keep an eye on the crostini as they can begin browning quite quickly. I like to start checking about halfway through. This depends almost entirely on how thin you cut the bread. You want the texture to be crisp but not hard.
- To thin the dip, you can add a teaspoon or two of milk or water and stir to combine.
