Marshmallow Berry Flower Cookies
Aaagghh! Can you believe Easter is sneaking up on us so quickly? Reece was just asking when his Spring break is and I realized that it’s only three weeks away which means Easter is coming up fast! We always make a big deal out of Easter here at our house. Since we’re the only ones with kids, the whole family ends up at our house for the CRAZY Easter Egg hunt and lunch. I loved Easter Egg hunts growing up so I always make them super special for the boys. When I was growing up we had tons of cousins and we would go to my Grandma’s every year for Easter. My Uncle Tim would hide a $20 bill in one of the eggs and let me tell you, it was quite the competition! There was no casual strolling around looking for eggs.
No. It was a mad dash. And of course to make it fair, we were sent out youngest to oldest so that the little cousins had a fair shot too. That’s just how we roll. I vividly remember the year I found the “golden egg” – I think I thought I’d won the lottery! Twenty bucks is a lot to little kids! Well, I haven’t been putting that much in our eggs but I do like to put some spare change and watch the boys get all excited when they pick up an egg that “jingles” – too fun! Over the years I’ve developed strategies for filling our 150+ eggs each year and coming up with ideas that AREN’T candy – we get enough sweets during the day!
I always like to make lots of yummy treats for Easter. The lunch meal is always pretty much the same: ham, mashed potatoes, rolls, etc. But where I can really experiment is in the dessert arena. I think there are definitely expectations when people come to my house for a meal. They expect the food to be outstanding and there to be lots of it. And, hey – I don’t like to disappoint 🙂
I knew I wanted to make a filled cookie and the Marshmallow Fluff was calling my name. To make it more Easter-y and more yummy, I picked up some of this intriguing Scottish Thee Berry Preserve to mix in with the marshmallow fluff. It actually makes the fluff easier to work with and tints it a pretty pale pink. I also picked up this offset spatula and am now wondering how on earth I EVER lived without it?!?
Time to make the cookies! These cookies take only four ingredients are are so light and buttery – just delicious! The marshmallow berry filling really takes them over the top. I found a pretty cookie cutter at World Market that I used for the cookies. I made cutouts on half of the cookies so I would have space to add my pretty decorations. I also picked up so me Candy Coated Choco Almonds, Pastel Pearl Nonpareils and Jelly Beans to decorate the cookies.
I finished decorating the cookies and then poured some jelly beans onto my new cake plate {LOVE!} Â Genius! I love how the cookies pop against all that color!
I think these Marshmallow Creme Flower Cookies are going to steal the show this year. Buttery cookies filled with marshmallow fluff and three berry filling and topped with pretty candies – yep! Gorgeous! And see that cute lady bug and frog? Those came in packs of six and there were lots of different ones to choose from. What a fun way to decorate different platters and plates for Easter! I also got some for the baskets!
Ahhh, I just love building Easter baskets for the boys!

Marshmallow Berry Flower Cookies
Ingredients
Cookies
- 2 cups flour
- 12 tbsp butter
- 2/3 cup sugar
- 1 egg yolk
Marshmallow Berry Filling
- 7.5 oz marshmallow fluff
- 2 tbsp berry preserves
Instructions
Cookies
- Put flour and butter in food processor and pulse until mixture resembles small crumbs.
- Add in the sugar and egg yolk and process until the mixture begins to form a dough. The dough will still be crumbly.
- Knead dough on a lightly floured surface until it comes together and is smooth.
- Wrap up in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper or lightly grease.
- Roll out dough on a lightly floured surface to 1/4 inch thickness.
- Cut out cookies with cookie cutter. If you are doing cutouts, do half of the cookies whole, and half of them with a cutout.
- Place on cookie sheet and bake for 10 minutes or just until you see a little color. Do not over bake!
- Cool on a wire rack.
Marshmallow Berry Filling
- Combine marshmallow fluff and preserves in a small bowl.
- Once cookies are cooled, spread 1 tablespoon of filling onto bottom cookie and place another cookie on top. Top with decorations of your choice or leave plain.
