Skinny Strawberry Green Tea Mojitos are the perfect cocktail recipe for Spring or Summer!
This past weekend my husband and I decided to tackle the backyard. Each Spring it seems like we spend the first few weekends getting it all cleaned up and ready for planting. With the weather so beautiful we decided to tackle it early this year. The hybrid tree {peach, plum, and nectarine} is already blossoming and the cherry tree is just bursting with buds – I can only hope that we will have the same cherry “problem” we had last year 🙂
We cleaned up the strawberry beds and were figuring out how many more plants we thought we could sneak in this year because we just never seem to have enough strawberries! I actually bought another strawberry planter at Sam’s Club this weekend. It came with 25 strawberry “plants”. I swear, I could not even tell which end of the “plant” was the root! I’m just crossing my fingers I guessed right and I’ll have a planter full of strawberries in a few months 🙂
The thought of all those strawberries of course got me craving some so I headed to the store to pick some up so I could make up a batch of Skinny Strawberry Green Tea Mojitos. Yeah. It’s a mouthful. But well worth it.
Mojitos are one of my favorite cocktails – probably because I am quite partial to mint {i.e. I sniff the bunch of mint obsessively while walking around the store. I mean, really, does anything smell better than fresh mint leaves??} Â I love the addition of strawberries and green tea in this cocktail – perfect for Spring and Summer! Not to mention this is a drink you can enjoy and feel great about. First we’ve got the strawberries. Who doesn’t love strawberries? They’re so beautifully sweet and delicious. They are also amazing paired with fresh mint. Can we just all agree right here and now that we’ll consider mint a vegetable?? It IS green. And I know it’s good for you.
You know what else goes with mint? Tea! Green Tea to be specific. DIET Green Tea. As in NO calories. Now we’ve got the green tea that is just firing up your metabolism. I mean. Really. This drink is basically burning calories. And because it’s good for you we also throw in a little lime and a tiny bit of sugar {just in case you’re working with strawberries that AREN’T straight from your garden}. Oh yeah. And the rum. The rum is there because, well, it also goes great with lime and mint 😉  Top it off with a little club soda and you’ve got a cocktail that you won’t soon forget!
So we’ve got our strawberries, limes, mint {aka “veggies”}, green tea…soooo, when it comes right down to it, this little cocktail is basically a deconstructed smoothie. Are you with me? Let’s get to muddling! One of the key steps to a great Mojito is proper muddling of the ingredients. Muddling is the process of releasing the essential oils and fruit juice by gently bruising the lime, strawberries, and mint. If you don’t have a muddler just use a wood tool with a flat edge.
Skinny Strawberry Green Tea Mojitos
Ingredients
- 4 fresh strawberries
- 8 frozen strawberries
- 1 lime cut into wedges + 1 lime, juiced
- 1 cup Lipton Diet Green Tea {Honey Ginseng}
- 4 oz white rum
- small handful of mint leaves
- 1 tbsp super fine sugar
- club soda
Instructions
- Muddle the lime wedges, fresh strawberries, mint leaves, and sugar together. Add the lime juice and rum. Stir. Add four frozen strawberries to each glass and fill each glass with half of the mixture. Top off with club soda. Garnish this cocktail with sprigs of mint, strawberry or lime slices.
Nutrition
I like to serve these Mojitos over frozen strawberries instead of ice. Not only do they keep the drink nice and cold but they release even more flavor and beautiful color as they melt away. If you are working with fresh strawberries, just throw a handful of strawberries onto a baking sheet and pop in the freezer for 30 minutes. Or, you can always serve over ice.

I don’t care for ready-made teas. Prefer to make mine “from scratch.” Do you think it would change the flavor if I used decaf green tea made from tea bags? I rarely drink alcohol but these sould like they would be delicious even without it!

Sounds delicious! Though we don’t do diet drinks and fake sugars. I am fine with brewed tea and real sugar. I even have limes sitting on my counter!

please know that artificial sweeteners are excitatory neurotoxins…ie poison to the central nervous system of humans. best to leave those out and consume a few calories of sugar.
