Preheat the oven to 350 degrees.

Stir together cream cheese, green onions, jalapenos, bacon, pepper jack & sharp cheddar cheese.

Line two large baking sheets with parchment paper.

Top with additional bacon and cheese if desired.

Spoon a rounded teaspoon of the filling into scoop chips.

Bake for 8 to 10 minutes or until filling is bubbly and cheese is melted.

Make the filling ahead of time. The mixture can be made 2 days in advance & kept in the fridge.
These jalapeño popper bites are kid-friendly! Remove all seeds & membranes from the jalapeños to keep the heat down.

Want more spice? Keep the seeds in, or add in extra jalapeños.
Don’t over bake! You'll know they're ready when the filling is bubbling slightly (around 8 minutes in the oven.)
