Strawberry Sorbet
Whether you’re growing your own strawberries or taking advantage of the excellent summer strawberry prices, strawberry treats are a must make during the summer.
Here in California, you can’t drive anywhere without encountering a strawberry stand or a you-pick strawberry patch. Even though my boys have entered the tween-teen stage of life, they still get excited about picking juicy red strawberries.
I might add, that we have dozens and dozens of strawberry plants in our own backyard but for some reason they seem less inclined to pick those… go figure.
We make all kinds of treats with our fresh strawberries but this strawberry sorbet is something special. Perfectly refreshing for those endless 100+ degree days that seem to hit sometime in mid-July and extend on through “fall”.
What Do I Need?
Strawberry Sorbet only uses four ingredients, one of which is water. So basically, there is no reason to NOT make this easy dessert.
Here’s what you’ll need:
- strawberries – feel free to use fresh or frozen here, use what you have!
- sugar – while the strawberries are definitely sweet on their own, a simple syrup made with the sugar and water really is needed in this sorbet recipe
- water – typically a simple syrup is a 1:1 ratio of sugar to water but since we’re working with already sweet strawberries, you’ll only use one cup of sugar and three cups of water
- lemon juice – I also love this recipe with lime juice
How To Make Strawberry Sorbet in 5 Easy Steps
- Prep Strawberries Rinse strawberries thoroughly and quarter.
- Make Simple Syrup Bring water and sugar just to a boil and keep stirring until sugar is completely dissolved. Cool.
- Combine Ingredients n a large bowl, combine syrup, lemon juice and prepared strawberries.
- Blend Until Smooth Transfer to a blender or food processor and process until smooth.
- Freeze Pour the mixture into a freezer safe container and freeze overnight or for a minimum of 6 hours.
Invest in a homemade ice cream container to safely store your favorite frozen treats all summer long!

How To Make Strawberry Sorbet
Strawberry Sorbet
Ingredients
- 1 cup granulated sugar
- 3 cups water
- 5 cups fresh or frozen strawberries cleaned and quartered (about 2 pounds)
- 2 tablespoons lemon juice or lime juice
Instructions
- Rinse strawberries thoroughly and quarter. Set aside.
- In a medium saucepan, bring water and sugar just to a boil over medium-high heat.
- Keep stirring until sugar is completely dissolved. Remove from heat and let cool.
- In a large bowl, combine syrup, lemon juice and prepared strawberries.
- Transfer, in small batches if needed, to a blender or food processor and process until completely smooth.
- Pour the mixture into a freezer safe container and freeze overnight or for a minimum of 6 hours.
- Store leftovers in freezer for up to 2 weeks.

This is delicious. I used fresh strawberries because I had them on hand. My teenagers loved it. It makes an excellent topping for angel food cake. It’s great by itself as well, to which my 13 year old had 3 bowls. I will definitely make this again.
