Anyone else feeling like it’s too hot to bake? I need only glance at my oven before I start breaking out in a cold sweat…that thing is staying OFF while triple digit temps are the norm. Can I just say thank goodness for icebox cakes?
It’s swimsuit season but goshdarnitall, I still want CAKE! Thank goodness for this Skinny Chocolate Raspberry Icebox Cake! Full of rich chocolate and creamy no bake cheesecake, it’s impossible to resist!
Layers and layers of awesomeness between sweet graham crackers., it takes no time at all to pull together. First let’s talk about the pudding layer. Sugar-free chocolate pudding made with…wait for it…nonfat milk and low-fat chocolate ice cream…I know! It’s insane!
Seriously, the most delicious chocolate pudding EVER and I used my favorite Weight Watchers® GIANT Chocolate Fudge Ice Cream Bars for the ice cream. I’m a genius.
Next comes a layer of skinny no-bake cheesecake made with just three ingredients: low-fat cream cheese, vanilla extra, and lite whipped topping. Easy, breezy, delish. Another layer of chocolate pudding and then a final layer of whipped topping does the trick.
I topped the entire icebox cake with fresh raspberries and chocolate shavings, cause, duh, more chocolate.
It’s like the gates of heaven opening up when you cut into this thing…
Gimme.
