We’re leaving in a couple of weeks for a Disney cruise and while I’m super excited to go I’m not looking forward to donning a swim suit immediately after the holiday season. Yikes! The good news is that I can still eat almost everything I love without out feeling guilty. I just need to make a few modifications 🙂
These orange muffins kinda freaked me out with how good they were. I took one of my favorite “traditional” muffins recipe and swapped in some Greek yogurt and coconut oil for less healthier ingredients. The result was stunning.
These muffins are more moist, more delicious, and WAY more fabulous than the original recipe. I love the brightness that the orange zest adds to these incredibly tender muffins. Bryce devoured, DEVOURED three of these while I was taking the pics.

Hard to blame him though. That sweet glaze speckled with orange zest is just too pretty to resist.

How To Make Orange Muffins
Skinny Orange Muffins
Ingredients
- 1 â…” cup flour can use AP or half AP and half wheat
- â…” cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- â…“ cup coconut oil melted if solid, or canola or vegetable oil
- â…” cup Greek yogurt plain
- â…“ cup milk
- 1 egg
- 1 tablespoon orange zest
Optional Glaze:
- 2 tablespoons fresh orange juice
- 1 cup powdered sugar
- 1 tablespoon orange zest
Instructions
- Preheat oven to 350°F.
- Line muffin tin with baking cups or spray with nonstick cooking spray.
- Combine flour, sugar, baking powder and salt in a small bowl. Set aside.
- Whisk together coconut oil, Greek yogurt, milk, egg and one tablespoon of orange zest together in a medium bowl.
- Stir in flour mixture just until moistened.
- Divide batter evenly among muffin cups.
- Bake for 16-20 minutes or until just golden brown. Cool in pan for several minutes before removing.
Optional Glaze
- Combine orange juice, powdered sugar, and orange zest in small bowl. Mix until smooth.
- Drizzle over muffins a few minutes after removing from pan.

These muffins taste great, even with my snafu. The coconut oil and the orange zest make a great flavor combination. The muffins tasted great without the glaze, but even better with it, so I highly recommend the glaze on the muffins. This recipe allowed me to use coconut oil for the first time and I now realize that liquid coconut oil, not the solid coconut oil, is what’s needed for this recipe. (I hadn’t read through all of the reviews when I put my shopping list together.) Perhaps the recipe could be updated to reflect that liquid coconut oil is best for this recipe rather than having to find it in the comments?

Thanks Janice! Solid coconut oil just needs to be warmed very slightly to become liquid, it’s what I used in this recipe. Updated the recipe to make that clear too!

I just tried this recipe and did it half AP and half Whole Wheat. I also substituted the orange zest with Young Living Orange Essential Oil. The hubs loved them. I’m making a second batch because he already ate 3 and i ate 1. These are going fast and the coconut oil really goes well with the orange.

These were fantastic! First time I have ever made orange muffins, but it sure won’t be the last. Full of flavor and really moist. I substituted 2/3 of the AP flour with whole wheat pastry flour for extra fiber and it worked really well. I had some orange blossom water so I used on 1tsp in the batter and another in the icing – loved it!

A commenter above said 211 calories. I don’t know about that, but the Weight Watchers recipe calculator says 12 muffins are 6 PointsPlus each including the glaze.

Would I be able to use almond milk instead of regular milk?

I used almond milk. Nancy’s low fat yogurt. Mainly coconut oil with a little veggie oil. The taste is wonderful but mine are too white. They did not brown but they are totally done.
Any ideas?
