I think I may have mentioned once or twice now that I’m seeing a nutritionist. I realized that I needed some help a few months ago and seeing Stephanie has really enabled me to evaluate the food that I’m putting in my body. Once I got over the initial freaking out period (it took awhile…) I started to make the necessary adjustments. One of the main changes that I have made to my diet is with the amount of protein that I eat each day. It’s easily double what I used to eat but it’s super important because I want to see fat loss – not muscle loss. I like my muscles. They burn calories for me while I type up posts. They’re pretty nifty actually 🙂
Lunches for me have changed quite a bit and I find myself continually tweaking old recipes that I have to make them more figure-friendly as well as increasing the amount of protein per serving. The thing is – I LOVE food. So if I make something and it’s “healthy” but I don’t like it – well that just means I’m hitting the fridge thirty minutes later on the hunt for something “good”.
This particular recipe is a single serving and is packed full of goodness. I’ve completely eliminated the mayonnaise and replaced it with avocado and fresh lemon juice. The avocado adds some creaminess as well as good fats and the lemon adds moisture and some zinginess to the mix.
Fresh dill is what really takes this over the top. Any time I use fresh herbs in a recipe I feel super fancy. I also feel like I’m treating my body well 🙂  The flavor you get with fresh herbs is really unbeatable but if you can’t get fresh dill, by all means used dried dill. Make sure you treat your tomatoes with a little TLC when you scoop out the insides. You want to keep the skin intact and beautiful!
This recipe can easily be doubled and would be absolutely fabulous served at a lunch or brunch. You could make these into bites using smaller tomatoes or large cherry tomatoes. This would be gorgeous served in heirloom tomatoes as well! I’m planning a girls lunch in my head right now 🙂

Tuna and Avocado Stuffed Tomatoes
Ingredients
- 5 oz chunk light tuna in water drained
- 1/2 lemon juiced
- 1/4 avocado diced
- 1/2 tbsp fresh dill chopped
- 2 medium tomatoes
- salt and pepper to taste
Instructions
- Cut the tops off of two tomatoes and scoop out the seeds and the core with a spoon. Set aside.
- Combine tuna, lemon juice, avocado, dill, salt and pepper.
- Spoon into tomatoes and serve.

This lunch is brimming with nutrients and will make you feel just a tad bit more ready for the upcoming swimsuit season 🙂
